
About the apiary
A small apiary: a few dozen hives on meadows and at the edge of linden woods. We follow the bloom, so a jar holds one particular harvest — linden, buckwheat, wildflower — rather than honey in general.
We extract only ripe honey, once the comb is capped, and fill the jars without heating or filtering. That is why it clouds and sets: warming it for the sake of a clear jar destroys the very thing people buy it for.
Good honey is made by the bee. The beekeeper only stays out of the way.
How it works
The hives
On meadows and at linden edges, away from sprayed fields and away from roads.
The harvest
Only ripe honey out of capped comb, kept apart by flow rather than blended.
No heat
No pasteurising, no filtering. It sets on its own — which is what live honey does.
Filling
Filled in small batches and labelled: which flow, which year, what weight.
Care for the bees
They winter on their own honey, are treated in time, and are not stripped in autumn.
Delivery
Packed so the glass arrives whole, shipped across Germany and the EU.
